To set the text select the "Pages" tab and click the "Page Properties" button.

The "Page Properties" dialog will appear.

In the dialog, click the "Text Color" selector and the standard color dialog will appear allowing the desired color to be selected. Click "Apply for current page" or "Apply to the whole website" button to record changes.
